A Very Merry Christmas to You & your Mom & Ben & Andrea!

This post looks really rich...it's beautiful.

Can you believe a New Year is upon us? It seems like yesterday that we started blogging.

Thank you for your kind note, my friend. I've missed you, too! Hopefully, the blogging muse will come visit me more often in 2009.

Have the merriest of Christmases, Manuela - and may all your dreams come true in the New Year!

Hi Manuela!! Thank you for stopping in! :)

This pumpkin custard is the BEST! I freezed it in little individual containers and thaw one out every few days for dessert - its still amazing.

I robbed the recipe from here - http://debbyweighsin.wordpress.com/recipes/pumpkin-custard/

But here is what I did for mine.

PUMPKIN CUSTARD

In a bowl mix together:
- 1/2 cup brown "sugar" splenda
- 1/4 tsp ground ginger
- 1/2 tsp salt
Then add:
1/2 c egg beaters, or 4 egg whites
1 15 ounce can pumpkin
Mix tog. using a wire whisk.
Slowly add:
1 1/2 cups original or unsweetened vanilla almond breeze
Pour into a 9 or 10 inch pie plate sprayed with pam. Bake at 350 degrees for 40-50 minutes. Center is slightly wiggly when you bump it. Cool to room temp, then cover and refrigerate.

Sooo sooo good. I'm making this for the family for Christmas dessert!

Cheers
Tamzin

Mery Christmas to you too! It certainly has been a busy season, hasn't it? I remember my student teaching was around the holidays too....no time to come up for air that year!
