Happy New Year!

A new day and a new year--and I'm excited! I found this great little "poster" and it's totally got me revved up. How many of these are you or would you like to be? I know that there are a few I need to work on ;)

Cammy did a little year in review and I thought it would be fun to do one too. There were some changes in my life and most were positive, some need to be tweaked just a bit.

1. Sent off my application to the Faculty of Education and was accepted!
2. Quit a part-time job that I thought would be fun but wasnt'!--no more wasting time doing things I don't enjoy.
3. Started blogging and joined the HYC leading me to meet some of the most amazing, incredible people in the world!
4. Began the Couch to 5K training program and before I knew it I could run 7 miles by the summer!
5. Finally dropped those pesky pounds by working out--a lot!
6. Back to school in the fall and did my first round of practice teaching--I LOVED IT!!!!

Yes, I feel that I had a successful 2008 even though there were rough times (the economy, my investments, will there be a job for me?, gaining a little of the weight back during the faculty strike).

But, I am so ready for 2009 and am excited by the new possibilities and challenges that await. I hope that all of you are too!

I'll post soon about some of the new things I'm planning on fitting into my back-to-school schedule.

I love the poster. I would love to "BE" all of those things and more.

You should be so proud of all you have accomplished this year. I'm looking forward to hearing about all the great things you will get done in 2009.

Great poster and a great 2008 for you. I know 2009 will be awesome. I'm wearing a shirt that says a lot of phases the poster say but in personal terms. I am confident, I am positive, I am healthy, I am fit, I am rich, I am wise, I am loved....etc.

Butternut Macaroni and Cheese

1 real big butternut squash, cut in half. Rub the cut sides with a bit of olive oil and roast at 400 degrees on a cookie sheet for 60-75 minutes, until very soft when poked with a fork. Scoop out and discard the seeds. Scoop out all the flesh from one half and put it in a BIG bowl. Break it up into smallish, bite sized chunks. It's fine if some of it ends up mashed. Save the other half for a different recipe.

8 oz macaroni. Cook this according to package directions in salted water. While it is cooking, make the sauce. Drain the pasta and put it in the bowl with the squash. Fold it together with a spatula, gently, until well combined.

Sauce:
1.5 T. butter
1 small onion, chopped small (I use a food processor)
1 tsp. nutmeg
1/2 tsp. white pepper (black is fine, white is prettier)
1.5 T. flour
1 c. skim milk
12 oz. cheddar cheese (I think sharp cheddar tastes by far the best)

Melt the butter on medium heat in a saucepan. Add the onion and saute til soft. Add nutmeg and white pepper. Add the flour, stir it up good, and then add the milk S-L-O-W-L-Y. I mean, add a little splash and stir it in, then a bit more, stirring each time, until it is all incorporated. Heat almost to the boiling point, stirring often. I used a whisk to keep it smooth. It will thicken a bit. Don't let it boil, or it might not stay smooth, but it will still taste fine. Take it off the heat and add the grated cheese. Stir until melted. Taste and add some salt if you like. (I personally do think this recipe needs a bit of salt, but you decide).

Now, pour the sauce over the macaroni and squash. Stir it in gently with a spatula so it is well combined. Put this mixture into a 9 by 13 baking pan sprayed with cooking spray. Bake at 350 degrees for 30-40 minutes until hot and bubbly.
